This is the cake that took forever to make. I had planned to make this cake earlier last month.I had dutifully purchased all the ingredients and then got hit by several curve balls that caused it’s creation to be delayed.
Recipe: A Pumpkin and a Princess
First I was sick and who wants to bake cakes they can’t taste? Not this Hobbit! When I actually felt better and was ready to try to make it, I find that Merric had eaten the Granny Smith apples I had purchased. So I bought some more, made sure he understood not to eat them and finally I’m ready to make this apple cake!
I actually couldn’t find a package of toffee bits in the baking section. Well, I found where they should have been but since it is Thanksgiving time aisles such as these had been ransacked and they were out. I improvised by buying a couple Heath bars, putting them in a baggy and whacking it with a hammer. It was pretty therapeutic. Unfortunately my sprinkling skills leave much to be desired and it all kind of stuck to the caramel in the middle.
One thing that struck me as odd that I still don’t know why it is done this way but you don’t pre-heat the oven for this recipe. You stick it in the cold oven and then turn on the heat. Anyone know why or the benefit for doing it this way?
I did think it was pretty awesome that I made my own caramel sauce. I’d never done it before! Even though I did have some prepared caramel sauce in the fridge I could use, I decided to be daring and make my own. I’m pretty darn proud of it.
It is pretty darn yummy. If I had to do it over, I might actually find some toffee bits or buy a candy bar or two more as I don’t think I really had enough. Merric loved it and the caramel sauce was super yummy.
